  2. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet. Freeze for 15 minutes to firm up.
  3. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
  4. Dip each chilled cake ball into the melted chocolate, ensuring full coverage. Use a fork to lift and let excess drip off.
  5. Place the coated bites back on the parchment paper and immediately sprinkle with sprinkles if desired. Let set at room temperature or in the refrigerator until firm.
