Ice Cream Filling
  • 2 cups strawberries, pureed Ensure strawberries are ripe for the best flavor.
  • 1 cup heavy cream Can be substituted with whipped cream for a lighter version.
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
Outer Layers
  • 9 pieces graham crackers Break in half to form squares.

Preparation
  1. In a bowl, combine pureed strawberries, heavy cream, sweetened condensed milk, and vanilla extract. Mix until well combined.
  2. Break the graham crackers in half to form squares.
  3. Spread a layer of the strawberry ice cream mixture on a graham cracker square, then top with another graham cracker to form a sandwich.
  4. Repeat with the remaining ingredients until all the filling is used up.
  5. Place the sandwiches in the freezer for at least 4 hours, or until they are firm.

Notes

Store ice cream sandwiches in the freezer between layers of wax paper to prevent sticking. They can last up to two weeks if kept in an airtight container.
