  • 1 large eggplant sliced into rounds
  • 8 oz lasagna noodles uncooked
  • 1 cup ricotta cheese
  • 1.5 cups shredded mozzarella cheese divided
  • 0.25 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp dried oregano
  • 0.5 tsp dried basil
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Steps
  1. Preheat oven to 375°F (190°C).
  2. Brush eggplant slices with olive oil and season with salt. Bake on a parchment-lined baking sheet for 15 minutes until golden.
  3. Cook lasagna noodles according to package instructions. Drain and set aside.
  4. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, garlic, oregano, basil, salt, and pepper.
  5. In a baking dish, layer marinara sauce, lasagna noodles, eggplant, and cheese mixture. Repeat layers, ending with marinara and remaining mozzarella on top.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for 5 more minutes until bubbly.
  7. Let stand 10 minutes before serving. Garnish with fresh basil if desired.

Notes

For a meat version, add cooked ground beef or Italian sausage to the marinara sauce. Substitute cottage cheese for ricotta for a lighter option.
