  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 cup chicken broth
  • 1 cup canned diced tomatoes
  • 1 cup corn kernels
  • 1 cup black beans drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon cayenne pepper optional
  • 1 cup shredded cheddar cheese
  • 0.5 cup tortilla strips fried or baked
  • 0.25 cup sour cream
  • 2 tablespoons fresh cilantro chopped

Method
 

Steps
  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in cumin, chili powder, paprika, and cayenne pepper; cook for 1 minute.
  4. Add chicken broth, diced tomatoes, corn, black beans, and shredded chicken; bring to a simmer.
  5. Cook for 15 minutes, allowing flavors to meld. Adjust seasoning with salt and pepper as needed.
  6. Serve hot, topped with shredded cheese, tortilla strips, sour cream, and fresh cilantro.

Notes

For a vegetarian version, substitute the chicken with extra beans or tofu.
