Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter, melted
Filling
  • 1 can sweetened condensed milk (14 oz)
  • 0.5 cup heavy cream
  • 0.25 cup unsalted butter
  • 0.5 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
  4. Bake the crust for 8 minutes, then remove and let cool while preparing the filling.
  5. In a saucepan over medium heat, combine sweetened condensed milk, heavy cream, butter, and brown sugar. Stir constantly until mixture comes to a gentle boil.
  6. Reduce heat and simmer for 5–7 minutes, stirring frequently, until thickened slightly.
  7. Remove from heat and stir in vanilla extract and salt.
  8. Pour the caramel filling into the cooled crust and smooth the top.
  9. Refrigerate for at least 4 hours, or until fully set, before serving.

Notes

For a quicker version, use store-bought caramel sauce instead of making your own—just warm it slightly before pouring into the crust. Serve with whipped cream or a sprinkle of sea salt for extra flavor.
