- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, mix together mozzarella cheese, Parmesan cheese, Italian seasoning, and minced garlic.
- Flatten each biscuit dough round into a 5-inch circle using a rolling pin or your hands.
- Place one meatball in the center of each dough circle. Top with about 1 teaspoon of the cheese mixture.
- Gather the edges of the dough around the meatball and pinch together to seal completely, forming a ball. Place seam-side down on the prepared baking sheet.
- Brush the tops of each meatball bomb with olive oil. Bake for 18–20 minutes, or until the dough is golden brown and cooked through.
- Remove from oven and let cool for 5 minutes. Garnish with chopped parsley before serving.
Notes
For extra flavor, serve with warm marinara sauce for dipping. You can also add a pinch of red pepper flakes to the cheese mixture for a spicy kick. These meatball bombs are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10 minutes.
