  • 2 cups water
  • 4 green tea bags
  • 0.5 cup fresh mint leaves plus extra for garnish
  • 0.5 cup fresh lime juice about 3–4 limes
  • 0.25 cup honey or agave syrup adjust to taste
  • 4 cups ice cubes
  • 4 cups sparkling water or club soda chilled

Method
 

Steps
  1. Bring 2 cups of water to a boil in a small saucepan. Remove from heat and steep the green tea bags for 5 minutes. Discard tea bags and let the tea cool completely, then refrigerate until chilled.
  2. In a large pitcher, gently muddle the mint leaves with lime juice and honey (or agave) to release the mint oils and dissolve the sweetener.
  3. Add the chilled green tea to the pitcher and stir well to combine.
  4. Fill four glasses with ice cubes. Pour the tea mixture over the ice, leaving room at the top.
  5. Top each glass with 1 cup of sparkling water. Stir gently and garnish with a sprig of fresh mint and a lime wheel.
  6. Serve immediately and enjoy your refreshing mint tea mojito!

Notes

For an alcoholic version, add 1.5 oz of white rum per serving before topping with sparkling water. Store any leftover tea base (without sparkling water) in the refrigerator for up to 2 days.
