  • 1 lemon zest of 1 lemon
  • 1/4 cup lemon juice
  • Powdered sugar for dusting (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a mixing bowl, beat the eggs and sugar together until light and fluffy.
  3. Stir in the melted butter, milk, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, salt, lemon zest, and lemon juice.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking dish.
Baking
  1. Bake for 40-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
  2. Allow to cool before dusting with powdered sugar and serving.

Notes

This cake can be enjoyed on its own or with a scoop of vanilla ice cream. Store leftovers covered in the fridge for 3-4 days. Enjoy it chilled for a refreshing taste! You may also add berries to the batter for a flavor twist.
