Steps
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2–3 minutes.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Fold in the chocolate chunks and mini marshmallows until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set but still soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For an extra S'mores experience, lightly toast the baked cookies under the broiler for 30–60 seconds after baking—watch closely to avoid burning! Store in an airtight container for up to 5 days.
