Ingredients
  

Jello Sphere Mix
  • 2 cups water divided
  • 0.25 cup sugar
  • 2 tbsp agar agar powder
  • 1 tbsp lemon juice
  • 1 tsp gel food coloring assorted colors
  • 1 tsp fruit flavoring optional, e.g., strawberry, lime, or orange
Setting Bath
  • 4 cups cold water
  • 1 tbsp vegetable oil for preventing sticking

Method

  1. In a small saucepan, combine 1.5 cups water, sugar, and agar agar powder. Whisk well to dissolve.
  2. Heat the mixture over medium heat, stirring constantly, until it comes to a full boil. Boil for 2 minutes to activate the agar.
  3. Remove from heat and stir in lemon juice, food coloring, and fruit flavoring (if using). Let cool for 5 minutes.
  4. Fill a syringe or small squeeze bottle with the jello mixture. Prepare the setting bath by combining cold water and vegetable oil in a wide bowl.
  5. Slowly drip the jello mixture from a height of about 4 inches into the cold water bath. The droplets will form into spheres as they fall.
  6. Let the spheres sit in the bath for 2–3 minutes to fully set. Gently scoop them out with a slotted spoon and transfer to a bowl of clean cold water.
  7. Rinse the spheres gently in fresh water to remove excess oil. Serve immediately or store in water in the refrigerator for up to 24 hours.

Notes

For best results, use a syringe with a narrow tip or a piping bag with a small round tip. Work quickly once the jello mixture cools, as it will begin to thicken. These spheres are best enjoyed the same day they're made. Experiment with layering colors by making spheres in batches!
