  • 1.5 lb boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 1 cup baby carrots, halved
  • 1 cup baby potatoes, halved
  • 0.5 cup frozen peas added after cooking

Method
 

Steps
  1. Place the chicken breasts at the bottom of the pressure cooker.
  2. Add chicken broth, onion, garlic, thyme, rosemary, salt, and black pepper.
  3. Layer carrots and potatoes on top of the chicken.
  4. Secure the lid and set the pressure cooker to high pressure for 8 minutes.
  5. Once done, perform a quick release. Carefully open the lid and stir in frozen peas.
  6. Let sit for 2–3 minutes to allow peas to warm through. Serve hot.

Notes

For extra flavor, sear the chicken on sauté mode before pressure cooking. Leftovers store well in the refrigerator for up to 3 days.
