Steps
- In a large pot over medium-high heat, brown the ground beef until no pink remains. Drain the excess grease.
- Stir in the taco seasoning and beef broth. Bring to a light simmer.
- Add the drained black beans, kidney beans, corn, and diced tomatoes. Stir well to combine.
- Reduce heat to low and simmer for 15 minutes to allow flavors to meld.
- Ladle into bowls and top with cheese, sour cream, and crushed tortilla chips.
Notes
For a vegetarian version, simply swap the ground beef for extra beans or plant-based meat crumbles.
