  • 2 large cucumbers spiralized
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion thinly sliced
  • 0.5 cup Kalamata olives pitted and halved
  • 0.5 cup feta cheese crumbled
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.25 tsp black pepper freshly ground

Method
 

Steps
  1. Spiralize the cucumbers using a spiralizer or vegetable peeler. Place them in a large mixing bowl.
  2. Add the cherry tomatoes, red onion, Kalamata olives, and crumbled feta to the bowl with the cucumbers.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and black pepper until well combined.
  4. Pour the dressing over the salad and gently toss to coat all ingredients evenly.
  5. Let the salad sit for 5–10 minutes to allow the flavors to meld before serving. Enjoy chilled or at room temperature.

Notes

For best results, use English or Persian cucumbers as they have fewer seeds and hold their shape well when spiralized. This salad is best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 2 days—note that the cucumbers may release water over time.
