- Heat olive oil in a large skillet over medium-high heat. Add sliced onions and bell peppers. Sauté for 5 minutes until softened and slightly caramelized.
- Add ground beef to the skillet. Cook, breaking it apart with a spoon, until browned and cooked through, about 6–7 minutes. Drain excess fat if needed.
- Stir in garlic powder, salt, and black pepper. Cook for 1 minute until fragrant.
- Add beef broth and bring to a simmer. Stir in tortellini and cook according to package directions, usually 7–10 minutes, stirring occasionally.
- Reduce heat to low. Lay provolone cheese slices over the top of the mixture. Cover and let melt for 2–3 minutes until cheese is gooey and fully melted.
- Serve hot, garnished with extra black pepper or chopped parsley if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes when sautéing the vegetables. Leftovers reheat well in a skillet with a splash of broth to restore moisture.
