  • 1 cup creamy peanut butter
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 cups crushed graham crackers
  • 1 cup chopped mixed nuts (peanuts, almonds, walnuts)

  • 0.5 cup semi-sweet chocolate chips
  • 1 tablespoon peanut butter

Method

  1. Line an 8x8-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.
  2. In a large bowl, mix together the melted butter, peanut butter, and vanilla extract until smooth.
  3. Gradually add the powdered sugar, mixing until fully combined and a thick dough forms.
  4. Stir in the crushed graham crackers and chopped nuts until evenly distributed.
  5. Press the mixture firmly into the prepared pan, creating an even layer.
  6. In a microwave-safe bowl, melt the chocolate chips and 1 tablespoon peanut butter in 30-second intervals, stirring until smooth.
  7. Spread the chocolate mixture evenly over the nutty base.
  8. Refrigerate for at least 2 hours, or until firm. Lift out using the parchment and cut into 12 bars.

Notes

Store bars in an airtight container in the refrigerator for up to 1 week. For a nut-free version, substitute sunflower seed butter and omit nuts or use seeds like pumpkin or sunflower.
