  • 8 oz mozzarella cheese cut into 1‑inch cubes
  • 0.5 cup all‑purpose flour
  • 2 pcs large eggs lightly beaten
  • 1 cup panko breadcrumbs seasoned with Italian herbs
  • 0.25 cup parmesan cheese freshly grated
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 0.25 tsp black pepper
  • 2 tbsp olive oil for baking

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up a breading station: place flour in a shallow bowl, beaten eggs in a second bowl, and a mixture of panko, parmesan, garlic powder, oregano, and black pepper in a third bowl.

  3. Roll each mozzarella cube in flour, dip into the egg, then coat thoroughly with the panko mixture.

  4. Place the coated bites on the prepared baking sheet and drizzle or brush lightly with olive oil.

  5. Bake for 12‑15 minutes, or until the coating is golden brown and the cheese is melted. For extra crispness, switch to broil for the last 1‑2 minutes, watching closely.
  6. Remove from oven, let cool 2 minutes, and serve with marinara or your favorite dipping sauce.

Notes

For a gluten‑free version, substitute the flour and panko with almond flour and crushed pork rinds. These bites can also be frozen after coating; bake from frozen, adding 3‑4 extra minutes.
