  • 4 oz cream cheese softened
  • 1 tsp vanilla extract
  • 8 oz semi-sweet chocolate chips
  • 1 tbsp coconut oil or shortening, for smoother coating

  1. Crumble the Little Debbie snack cakes into a large mixing bowl until they resemble fine crumbs.
  2. Add the softened cream cheese and vanilla extract to the crumbs. Mix thoroughly until a thick, moldable dough forms.
  3. Roll the mixture into 12 small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  4. Freeze the cake balls for 15 minutes to firm them up.
  5. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
  6. Dip each frozen cake ball into the melted chocolate, coating completely. Use a fork to lift and let excess drip off.
  7. Place the coated bites back on the parchment paper and let them set at room temperature or in the refrigerator until the chocolate hardens.

Notes

Store in an airtight container in the refrigerator for up to 1 week. For a festive touch, roll the bites in sprinkles or crushed nuts before the chocolate sets.
