  • 2 cups organic whole wheat pasta
  • 1 cup organic cherry tomatoes halved
  • 0.5 cup organic baby spinach
  • 0.25 cup organic feta cheese crumbled
  • 2 tbsp organic olive oil
  • 1 clove organic garlic minced
  • 0.5 tsp dried oregano
  • 0.25 tsp sea salt
  • 0.125 tsp black pepper

Method
 

Steps
  1. Bring a pot of salted water to a boil. Cook the organic whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add cherry tomatoes to the skillet and cook for 5–7 minutes, stirring occasionally, until they begin to soften and release their juices.
  4. Stir in baby spinach and cook for 2 minutes until wilted. Season with oregano, sea salt, and black pepper.
  5. Add the cooked pasta to the skillet and toss everything together until well combined. Remove from heat.
  6. Sprinkle crumbled feta cheese over the top and serve warm or at room temperature. Pack in lunchboxes for a delicious organic kids' meal.
