  • 1.5 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil divided
  • 1 medium red bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 medium zucchini sliced into half-moons
  • 1 cup cherry tomatoes halved
  • 0.5 medium red onion sliced
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Steps
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and season with salt, pepper, and oregano. Cook for 5–6 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil. Add red onion, bell peppers, and zucchini. Sauté for 5 minutes until vegetables begin to soften.
  4. Stir in garlic and cherry tomatoes. Cook for another 2–3 minutes until fragrant and tomatoes start to blister.
  5. Return the cooked chicken to the skillet. Stir everything together and cook for an additional 2–3 minutes to heat through.
  6. Taste and adjust seasoning if needed. Serve immediately.

Notes

For extra flavor, sprinkle with fresh parsley or grated Parmesan before serving. This dish pairs well with rice, quinoa, or crusty bread.
