  • 2 cups cooked black beans or 1 can (15 oz), drained and rinsed
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.25 tsp cayenne pepper optional, for heat
  • 1 tbsp olive oil
  • 8 corn tortillas
  • 1 cup shredded lettuce
  • 0.5 cup diced red onion
  • 1 avocado sliced
  • 0.25 cup fresh cilantro chopped
Zesty Sauce
  • 0.5 cup sour cream or Greek yogurt
  • 2 tbsp lime juice freshly squeezed
  • 1 clove garlic minced
  • 0.25 tsp salt
  • 1 tbsp chopped cilantro

Method
 

Steps
  1. In a medium skillet, heat olive oil over medium heat. Add black beans, cumin, smoked paprika, and cayenne. Cook for 5–7 minutes, stirring occasionally, until heated through and fragrant.
  2. While beans cook, prepare the zesty sauce: In a small bowl, whisk together sour cream, lime juice, minced garlic, salt, and cilantro. Set aside.
  3. Warm tortillas in a dry skillet or microwave until pliable. Keep covered to retain heat.
  4. Assemble tacos by spooning black bean mixture into each tortilla. Top with shredded lettuce, red onion, avocado slices, and a drizzle of zesty sauce. Garnish with fresh cilantro.
  5. Serve immediately with extra lime wedges on the side.

Notes

For a vegan version, use dairy-free sour cream or cashew cream. Add corn or diced bell peppers to the beans for extra texture and sweetness.
