- Preheat oven to 350°F (175°C). Grease a doughnut pan with non-stick spray.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix grated carrots, milk, egg, melted butter, and vanilla extract until well combined.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Spoon batter into prepared doughnut pan, filling each cavity about ¾ full.
- Bake for 18–20 minutes, or until a toothpick inserted comes out clean. Let cool in pan for 5 minutes, then transfer to a wire rack.
- While doughnuts cool, prepare glaze: In a small bowl, beat cream cheese until smooth. Add powdered sugar, milk, and vanilla; mix until creamy.
- Drizzle or spread glaze over cooled doughnuts. Let set for 10 minutes before serving.

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days. For best texture, warm slightly before serving.
