  • 1 large butternut squash peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed butternut squash with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Spread the squash in a single layer on the prepared baking sheet. Roast for 15 minutes.
  4. Remove from oven and sprinkle the grated Parmesan cheese evenly over the squash. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and golden.
  5. Garnish with chopped parsley and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes before roasting. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
