  • 12 pieces phyllo cups
  • 8 oz brie cheese cut into small cubes
  • 2 tbsp honey plus extra for drizzling
  • 1 tsp fresh thyme leaves chopped
  • 0.25 tsp black pepper freshly ground
  • 2 tbsp chopped walnuts optional, for garnish

Method
 

Steps
  1. Preheat your oven to 375°F (190°C).
  2. Place the phyllo cups on a baking sheet in a single layer.
  3. Fill each phyllo cup with 2–3 small cubes of brie.
  4. Drizzle 1 teaspoon of honey over the brie in each cup.
  5. Sprinkle thyme and black pepper evenly over the filled cups.
  6. Bake for 12–15 minutes, or until the brie is melted and bubbly.
  7. Remove from oven and let cool slightly. Drizzle with remaining honey and top with chopped walnuts if desired.
  8. Serve warm and enjoy immediately.

Notes

For a vegan version, substitute brie with a plant-based soft cheese and use maple syrup instead of honey. These can be assembled ahead and refrigerated; bake just before serving for best texture.
