  • 2 medium ripe avocados peeled and pitted
  • 0.5 cup feta cheese crumbled
  • 1 cup cherry tomatoes halved or quartered
  • 0.25 cup red onion finely diced
  • 1 clove garlic minced
  • 1 tablespoon fresh lime juice about 1 lime
  • 1 tablespoon extra virgin olive oil
  • 0.25 cup fresh cilantro chopped
  • 0.5 teaspoon salt or to taste
  • 0.25 teaspoon black pepper freshly ground

  1. In a medium bowl, gently mash the avocados with a fork until mostly smooth but still slightly chunky.
  2. Add the crumbled feta, cherry tomatoes, red onion, and minced garlic to the bowl.
  3. Drizzle in the lime juice and olive oil, then add the chopped cilantro, salt, and black pepper.
  4. Gently fold all ingredients together until well combined. Taste and adjust seasoning if needed.
  5. Cover and refrigerate for at least 15 minutes to allow flavors to meld before serving.

Notes

For best results, use ripe but firm avocados. Serve with tortilla chips, as a topping for grilled chicken or fish, or alongside tacos and burritos. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days—press plastic wrap directly onto the surface to prevent browning.
