Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 0.75 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
Coloring & Decoration
  • gel food coloring (assorted colors)
  • alphabet cookie cutters
  • edible glitter or sprinkles (optional)

Method
 

Steps
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  5. Divide the dough into 4 equal portions. Add a different gel food coloring to each portion and knead until the color is evenly distributed.
  6. Roll each colored dough portion to about 0.25-inch thickness on a lightly floured surface.
  7. Use alphabet cookie cutters to cut out letters. Transfer to a parchment-lined baking sheet, spacing them about 1 inch apart.
  8. Bake at 350°F (175°C) for 10-12 minutes, or until the edges are lightly golden.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  10. Decorate with edible glitter or sprinkles if desired, once cookies are completely cool.

Notes

Store cookies in an airtight container at room temperature for up to 1 week. Dough can be made ahead and refrigerated for up to 3 days or frozen for up to 1 month. Let frozen dough thaw in the refrigerator before rolling and cutting.
